Rice drying
A traditional bamboo rice drying rack (haza) photographed near a Japanese village, Kamiyama, Shikoku Island, Japan. Previously these racks of rice drying in the sun were a common sight in Japan, but now rice is harvested by machine. Hanging the ears of rice on racks in the sun dried the rice grains more gradually, with less cracking of the grains and more flavourful, better-tasting rice.

on December 1, 2021I never thought a lot about rice-drying, must admit it. Very interesting. I've seen pics of rice fields, but never after it got so tall that you could harvest like this.

on December 1, 2021I love seeing this traditional process for drying the rice. I realize it's more efficient and less labor intensive to do it by machine, but I like the romantic notion of how they did it before. Great and educational shot Terry!
